Chicken with Orange Sauce
Ingredients
- For the chicken
- 2 ready to cook chicken (each 900 grams)
- 4 garlic cloves
- 1 tsp coarse Sea salt
- 6 Tbsps olive oil
- 1 tsp Tabasco sauce
- For the orange marinade
- 2 lemons (juiced)
- 2 Oganic oranges (juiced)
- 2 Oganic oranges (zested)
- 125 milliliters olive oil
- 2 Tbsps Lemon liqueur (such as limoncello)
- 3 Tbsps Barbecue sauce
- 100 grams black Olives
- 200 grams Tomatoes
- 1 Tbsp finely chopped parsley
- salt
- freshly ground peppers
Preparation steps
Divide each chicken into 8 pieces. Peel garlic and squeeze through a press into a bowl. Add salt, olive oil and Tabasco sauce to the bowl and mix. Season chicken pieces with pepper, brush with garlic mixture, cover and let rest for 1 hour. Cook chicken pieces under a preheated oven broiler, watching carefully, for 20-25 minutes. (Cooking time may be longer or shorter depending on the thickness of the meat).
Meanwhile, mix lemon juice in a large shallow bowl with orange juice, orange zest, olive oil, liqueurs and season to taste with salt and pepper. Add olives. Blanch tomatoes briefly, rinse with cold water, peel, quarter and remove stem and seeds and cut into small cubes. Add tomatoes to the shallow bowl, add parsley and mix.
Place hot, grilled chicken pieces in the shallow bowl and cover in tomato mixture. Arrange on plates and serve with tortilla chips.
