The fine orange sauce not only makes the hearts of gourmets beat faster, but also shines with its inner values: Oranges score with the carotenoids beta-carotene, lutein and zeaxanthin. These natural colorants protect our cells from free radicals, which can be caused by smoking, stress or certain eating habits. In addition, beta-carotene is the most important precursor of vitamin A, which the body can convert into the vitamin-effective form. Therefore also the name Provitamin A.
The orange sauce goes perfectly with hearty game dishes. How about the duck breast fillet from EAT SMARTER? If children eat with you or you want to prepare the sauce without alcohol, you can also use light grape juice.

- 2 Oranges
- 1 tsp sugar
- 125 milliliters Madeira Wine
- 50 milliliters Red wine vinegar
- 350 milliliters Chicken broth
- 1 Tbsp cornstarch
- Orange liqueur
- salt
Preparation steps
Remove the peel the oranges with a very sharp knife. Julienne the zest, blanch in boiling salted water, rinse, and drin. Squeeze the oranges.
Caramelize the sugar in a saucepan, then deglaze with the orange juice, madeira, and vinegar. Reduce by 2/3, then add the broth. Bring to a boil. Mix the cornstarch with 1 tablespoon of water, and stir until smooth. Add to the sauce to thicken it. Simmer until the sauce reaches your desired consistency. Add the orange zest, and season with the salt and orange liqueur.
