- 5 ozs Whole-wheat elbow pasta
- salt
- 2 Tbsps Pine nuts
- 1 Chicken breast
- 1 Tbsp olive oil
- peppers
- 3 scallions
- 12 Cherry tomatoes
- 2 Tbsps Pesto
- 5 ozs Yogurt (low-fat)
- 4 Tbsps light Sour cream

Preparation steps
Cook pasta according to package directions in plenty of salted water until al dente. While the pasta is cooking, toast the pine nuts in a dry skillet until light brown and let cool on a plate.
Rinse the chicken, pat dry, and cut into 1/2 inch cubes.
Heat oil in a skillet and brown the diced chicken on all sides over medium heat, 5-6 minutes. Remove from skillet, season with salt and pepper and allow to cool.
Drain the pasta in a sieve and rinse briefly in cold water.
Rinse scallions, trim and cut into thin rings. Rinse and halve the cherry tomatoes.
Mix pesto, yogurt and sour cream. Season with salt and pepper.
Mix all the prepared ingredients in a bowl. Season with salt and pepper and let marinate 15 minutes. Adjust seasonings to taste before serving.
