Chicken Satay
Ingredients
- For the skewers
- 700 grams chicken
- 3 garlic cloves
- 2 shallots
- 3 Tbsps dark soy sauce
- 3 Tbsps sweet soy sauce
- 1 tsp Sambal oelek
- For the peanut sauce
- 2 shallots
- 3 garlic cloves
- 200 roasted, unsalted Shelled peanuts
- 4 Tbsps sweet soy sauce
- 1 tsp Sambal oelek
- 3 Tbsps Lime juice
- 3 tsps Palm sugar
- 3 Tbsps Peanut oil
- 150 milliliters Coconut milk
Preparation steps
To make chicken skewers: Rinse chicken, pat dry and cut into 2 cm (approximately 3/4 inch) pieces. Peel and thinly slice shallots and garlic and mix with both types soy sauces and Sambal Olek. Cover chicken pieces in marinade and thread onto wooden skewers. Place skewers in a bowl, cover and let marinate about 1 hour in the refrigerator.
To make peanut sauce: Finely chop shallots and garlic. In a blender, puree peanuts with sweet soy sauce, Sambal Oelek, lime juice and sugar. Heat oil in a saucepan. Add shallots and garlic and sauté briefly. Add peanut puree and cook briefly. Deglaze with coconut milk and simmer, stirring, until sauce is thickened, about 5 minutes. Add water to thin sauce, if necessary.
Heat grill. Place skewers on grill and cook, turning frequently, about 10 minutes.
Place skewers on a banana leaf, if desired. Serve with peanut sauce.
