6 Tbsps breadcrumbs (more if necessary)
4 Tbsps clarified butter
½ lemon (juice)

½ honeydew melon
1 small onion
1 green chili pepper
1 green chili pepper (cut into thin rings)
2 sprigs cilantro

freshly ground Black pepper
¼ cup lemon juice

Preparation steps

Wash the chicken breasts, pat dry and slice at an angle.

Season the meat with salt and pepper and sprinkle with lemon juice. Coat lightly in flour, then dip in beaten egg and coat in breadcrumbs, pressing the breadcrumbs on lightly.

Heat the clarified butter and fry the chicken sticks a few at a time over a medium heat for about 2 minutes each side, or until golden brown. Take out and drain on paper towel. Keep warm in the oven at 100°C.

For the melon salsa, halve, deseed and peel the melon half and finely dice the flesh. Peel and finely chop the onion. Wash, trim and deseed the chilli and dice very finely. Wash the coriander and pick off and finely chop the leaves. Mix the melon, chilli, onion, green chilli and coriander, season with salt and pepper and add the lemon juice.
