- For the falafel
- 2 cups chickpeas (garbanzo beans)
- 2 tsps ground cilantro
- 2 tsps ground Cumin
- 1 onion (finely chopped)
- 4 cloves finely chopped garlic cloves
- 1 Tbsp chopped parsley
- 1 Tbsp chopped cilantro
- salt (to taste)
- peppers (to taste)
- Oil (for deep frying)
- For the yoghurt dip
- 1 ⅛ cups plain Yogurt
- 1 Tbsp extra virgin olive oil
- ½ Tbsp lemon juice
- 2 tsps Harissa
- 1 clove garlic cloves (crushed)
- salt (to taste)
- To serve
- Pita bread
- very thinly sliced Red onions
- Cucumber
- To garnish
- Basil
Preparation steps
1.
For the falafel: drain the chickpeas and put in a food processor with the spices, onions, garlic, herbs, salt and pepper. Process to a grainy pulp.

Take small portions of the mixture and roll into balls.

Heat the oil in a deep-fryer or large pan until hot, but not smoking.

Cook the falafel a few at a time, for 2-3 minutes until deep golden brown. Remove and drain on absorbent kitchen paper.
5.
For the yoghurt dip: whisk all the ingredients together and spoon into a serving dish.
6.
Serve the falafel with pitta bread, red onion slices and cucumber slices. Garnish with basil.
