Preparation steps

Beat the butter and sugar until light and creamy. Add the egg yolk, one at a time, mixing well after each addition. Mix together the flour, ground almonds and cocoa powder in a separate bowl and stir into the egg yolk mixture alternately with the milk. Beat the egg whites with a pinch of salt and gently fold into the batter.

Preheat the waffle iron and grease with vegetable oil. Ladle a small amount of the batter into the waffle iron and cook until golden brown. Keep the cooked waffles warm in an 80°C (approximately 175°F) oven and continue making waffles with the remaining batter. Dust with powdered sugar and serve with maple syrup, whipped cream or other desired toppings.
