Preparation steps

Chop chocolate and melt over hot water bath. cool slightly. Separate eggs. Beat egg whites with salt until stiff. Whisk egg yolks with sugar until very foamy. Combine yolks with chocolate and fold in egg whites. Whip cream until stiff and fold into cream. Pour mixture into a bowl and  refrigerate for 3-4 hours. Peel and fillet oranges.

Arrange sliced ​​almonds on plates. With a damp spoon, take out chocolate mousse balls and place onto almonds. Arrange orange segments around and garnish with orange zest and mint leaves. Serve.
