100 grams Chorizo
200 grams Pearl onion
8 fresh garlic cloves
500 grams Cherry tomatoes
3 Tbsps olive oil
Sea salt

150 milliliters dry white wine

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the cod fillets and pat them dry. Slice the chorizo thinly and layer the slices on top of the cod. Peel the onions and garlic and add to a baking dish. Rinse the tomatoes, leaving the vines intact, and arrange in the baking dish. Drizzle everything with the olive oil and season with salt. Place the cod fillets on top. Pour the white wine into the dish and roast until the fish is cooked through, about 10-15 minutes. Season the sauce with salt and pepper. Serve the fish and vegetables together, garnished with arugula if desired.
