1 carrot
150 grams waxy potatoes
1 Celery
2 Zucchini
¼ Head of cabbage
1 stalk Leeks
2 Tomatoes
1 handful parsley
150 grams green Beans
2 Tbsps butter
100 grams Peas (frozen)
1 l Broth (vegetable or beef broth)
75 grams Arborio rice
salt

50 grams freshly grated Parmesan

Preparation steps

Soak the white beans overnight covered with water.

Cut the bacon into strips lengthwise and crosswise into cubes. Rinse the onions, garlic, carrots, potatoes, celery, zucchini, cabbage and leeks, trim, peel and finely chop or cut into pieces or slices. Scald the tomatoes in hot water, remove stem and cut the tomatoes in columns. Rinse the parsley, shake dry, pluck off the leaves and chop. Rinse, trim and cut the green beans into 2-3 cm (approximately 3/4-1 inch) long pieces. Add white beans and drain.

Put the butter in a hot pot and it sauté bacon briefly. Now add in all the prepared vegetables. Stir well and pour in the broth until it is well covered. Bring to a boil.

Add the rice and season with salt and pepper. Simmer on medium heat at least 25-30 minutes, until beans, potatoes, vegetables and rice are tender. Pour in more broth as needed.

5.

Season and serve sprinkled with freshly grated parmesan cheese and a few basil leaves.
