- For the cod
- 4 Cod (each 180 grams)
- salt
- freshly ground peppers
- juice of lemons
- 2 Pastry flour
- 2 Tbsps butter
- For the basil sauce
- 1 bunch Basil
- 3 garlic cloves
- 2 Tbsps grainy Mustard
- 8 Tbsps olive oil
- 2 Tbsps lemon juice
- 1 pinch sugar
- salt
- freshly ground peppers
- Lemon wedge (for garnish)
Preparation steps

For the cod, trim fillets, sprinkle with lemon juice and season with salt and pepper. Sprinkle cod with flour. In a large pan, heat butter and fry fish for about 3 minutes on each side until golden brown.

Meanwhile rinse basil, pluck leaves from stem, shake dry and chop leaves. Peel garlic and chop coarsely. Puree basil in a blender with garlic, oil and mustard and season with lemon juice, sugar, salt and pepper. Arrange fish fillets on plates, cover with basil sauce and serve garnished with lemon wedges.
