- 1 Cucumber
- salt
- ½ bunch parsley
- 28 ozs Yogurt (0.1% fat)
- 7 Tbsps milk
- 3 Tbsps lemon juice
- 3 Tbsps flaxseed oil
- salt
- white peppers
- 2 tsps flaxseed
Preparation steps

Rinse and peel cucumber, halve lengthwise and scrape out seeds. Grate cucumber, season with salt and let stand for about 10 minutes. Rinse parsley, shake dry, set four small sprigs aside for garnishing and pluck off leaves from remaining sprigs, chop finely.

Squeeze cucumber in a cheese cloth. Whisk yogurt with milk, 2 tablespoons of oil, lemon juice and chopped parsley and season with salt and pepper. Add cucumber and season to taste. Refrigerate for about 1 hour.

Pour soup into bowls and sprinkle with flaxseed, garnish with parsley and serve.
