Preparation steps

1.

Prepare the couscous with the granulated broth and water according to the package instructions. Remove from heat and allow to cool. Rinse the arugula, pat dry and remove any large stems. Crumble the feta cheese. Rinse the grapes and remove any stems. 

2.

Whisk together the olive oil and lemon juice and season with salt and pepper. Toss the couscous, arugula, grapes and feta cheese with the vinaigrette and season with salt and pepper. Serve immediately or package for lunches.
