- 400 grams Couscous
- 400 milliliters Vegetable broth
- 4 scallions
- 50 grams green, pitted Olives
- 1 gram chopped Fresh herbs
- 1 red paprika
- 1 onion
- ½ bunch parsley
- 2 Tbsps White vinegar
- 2 Tbsps lemon juice
- 3 Tbsps olive oil
- salt
- freshly ground peppers
Preparation steps
1.
Combine couscous with boiling vegetable broth and let soak about 5 minutes, covered. Fluff with a fork and let cool.

Rinse scallion and cut into rings. Cut olives into slices. Coarsely chop tomatoes. Rinse bell pepper, halve, remove seeds and ribs and dice. Peel onion and dice. Coarsely chop herbs and parsley.
3.
Mix together vinegar, lemon juice, and oil. Season with salt and pepper to taste. Mix together with vegetables and fresh herbs (except the parsley).
4.
Mix couscous with vegetables. Season to taste. Sprinkle with parsley and serve.
