350 milliliters Vegetable broth

250 grams Couscous (Instant)
40 grams golden raisin
2 scallions
60 grams dried Tomatoes (in oil)
2 Tomatoes
2 Tbsps olive oil
1 pinch Cardamom
1 pinch Cumin
1 pinch cinnamon
1 pinch cayenne pepper
lemon juice

Preparation steps

Combine broth with a pinch of salt and bring to a boil, gradually add couscous and raisins. Remove from heat and let soak for about 10 minutes. Fluff with a fork. Rinse and dry scallions, cut white parts into rings (reserve green parts for another use). Drain sun-dried tomatoes and cut into strips. Blanch fresh tomatoes in hot water, rinse in cold water and peel. Quarter and remove seeds, cut into pieces.

 Heat olive oil in a pan and saute onions until soft. Add sun-dried tomatoes and saute briefly. Add couscous, scallions and fresh tomatoes and season with spices. Season with lemon juice and serve.
