40 grams Pine nuts
1 handful flat-leaf parsley
½ lemon (juiced)

Preparation steps

1.

Soak the couscous for 15 minutes in water, then drain in a colander. Soak the raisins in some water also. Rinse, trim, and finely dice the cucumber.

2.

Rinse and quarter the cherry tomatoes. Toast the pine nuts in a dry pan. Rinse the parsley, pat dry, and chiffonade the leaves. Drain the raisins. Mix the couscous, raisins, cucumber, tomatoes, pine nuts, parsley, and olive oil. Toss to combine.
