Preparation steps

Cut olives into slices. Rinse sage leaves, shake dry and chop.

Separate 1 egg (save the yolk for another use). Whisk remaining eggs with egg white, mineral water and sage.

Heat oil in an oven-proof pan. Pour in eggs and season with salt and pepper. Crumble the cream cheese over the eggs, sprinkle in olives, and cook until slightly thickened, 1-2 minutes. Bake on the upper rack in the preheated oven at 220°C (approximately 425°F) until golden brown, 4-5 minutes. Fold the omelet in half and serve.
