½ bunch parsley
2 Tbsps lemon juice
3 Tbsps olive oil

Preparation steps

Rinse potatoes and cook until soft. Let cool, peel, and mash finely with a fork.

Peel garlic and squeeze through a garlic press. Pit olives and chop finely. Rinse parsley, shake dry and finely chop. Mix together the mashed potatoes, 6 to 8 tablespoons of hot water, lemon juice, and oil. Add salt and pepper. Serve in glasses with celery, fennel or breadsticks as desired.
