- vegetable oil
- 4 Chicken legs
- salt
- freshly ground Black pepper
- 3 large shallots (sliced into rings)
- 1 Tbsp olive oil
- 1 sprig fresh thyme
- 3 Tbsps dry white wine
- 2 cups chicken stock
- 2 tsps all-purpose flour
- 2 tsps dairy-free margarine
- ⅔ cup Oat cream
- To garnish
- chopped Chives
Preparation steps

Heat the vegetable oil in a frying pan to a depth of about 3cm|1". Season the chicken with salt and pepper and cook in the hot oil for about 10-15 minutes until golden and cooked through. Remove from the pan and keep warm. Wipe out the pan.

Add the olive oil to the pan and gently cook the shallots for about 5 minutes, until softened but not coloured. Pour in the wine and heat until evaporated.

Add the stock, bring to a boil and cook until reduced by half.

Mix the flour and margarine to a paste, then stir into the stock until it thickens.
5.
Stir in the cream and simmer for 5 minutes. Check the seasoning and serve with the chicken. Sprinkle with chives.
