Hearty spelt flour and tender oat flakes bring a whole lot of satiating fibre and many B vitamins into play. Vitamins from the B group work particularly well together as a team and are also considered "anti-stress vitamins". The secondary plant substances ferulic and ellagic acid from strawberries have been proven to have a cancer-preventive effect. They are also real vitamin packages. Plenty of vitamin C, K and folate are contained.
Unfortunately not everyone can tolerate strawberries. Alternative: blueberries (outside the season take frozen goods and use defrosted) or fresh ripe mango. You can also bake the cookies outside the Easter time and enjoy them as no snack. Then cut out the dough with cookie cutters of your choice.

- 5 ozs Spelt flour
- 5 ozs Spelt flour (type 630)
- 7 ozs fine Oats
- 2 ozs Raw cane sugar
- 1 pinch salt
- 1 pinch Baking powder
- 4 ozs Cultured butter
- 1 cup Buttermilk
- 24 raisins
- 3 Tbsps Coffee creamer (10% fat)
- 12 ozs Strawberries
- 12 ozs Buttermilk quark (or regular quark)
- 4 Tbsps mineral water (carbonated)
- 4 Tbsps powdered sugar (about 40 grams)

Preparation steps
Mix together both flours, oats, sugar, salt and baking powder in a large bowl. Add butter and buttermilk and beat with the dough hook of a hand mixer until smooth.
Roll out dough on a lightly floured surface about 1 cm (approximately 1/2-inch) thick. Cut out 12 rounds, about 9 cm (approximately 3 1/2 inches) in diameter, with an inverted glass or small bowl.
Line a baking sheet with parchment paper and put the dough rounds on sheet. With kitchen shears, cut each round from the top down to the middle, then pull the tips slightly longer for the bunny ears.
If desired, fold over 1 bunny ear. Attach 2 raisins for the eyes. Brush dough faces with coffee creamer and bake on second rack from bottom of preheated oven at 200°C (fan 180°C, gas mark 3) (approximately 400°F/convection 350°F) until firm to the touch, about 15 minutes.
Let cool slightly and transfer to a wire rack. Meanwhile, rinse and hull strawberries and pat dry with paper towels, then coarsely chop.
Place about 2/3 of the berries in a bowl and mash with a fork.
Mix together the quark, mineral water and powdered sugar in a medium bowl. Beat until creamy with the hand mixer.
Fold the mashed strawberries into the quark mixture until marbled and garnish with the remaining strawberry pieces. Serve with the warm Easter Bunny cookies.
