3 Tbsps olive oil
2 handfuls Arugula (torn into bite-sized pieces)
6 eggs
4 Tbsps cream
1 onion (diced)
1 cup Chorizo (diced)

Preparation steps

1.
Grill the bread until crispy. Drizzle with some oil and top with the rocket.
2.
Beat the eggs with the cream and season with salt and ground black pepper.
3.
Fry 1/4 of the onions and chorizo in some hot oil. Add 1/4 of the egg mixture and allow to solidify. Roll up the omelette, remove from the pan and cut into quarters. Continue like this with the remaining ingredients.
4.
Place the omelette rolls on top of the bread and serve.
