2 ozs tender Oats (about 7 tablespoons)
2 ozs Almond butter (about 4 tablespoons)
1 ¾ cups

2 large Pots (with lid), 1 Sieve, 1 Cutting board, 1 Small knife, 1 Tablespoon, 1 large Skillet, 1 Wooden spoon, 1 Measuring cups, 1 deep Bowl, 1 Immersion blender, 1 Fine grater, 1 Egg piercer, 1 Fork

Preparation steps

Rinse potatoes, place in a pot with enough salted water to cover and cook until knife-tender, about 20 minutes. Meanwhile, rinse spinach, spin dry and remove coarse stems.

Peel onions and garlic and chop finely.

Heat oil in a large skillet. Sauté onions and garlic until translucent. Add spinach and cook briefly.

Stir the oats, almond butter and milk into spinach mixture. Simmer over low heat for 5 minutes, then transfer to a tall vessel and puree with an immersion blender. Season with salt, pepper and freshly grated nutmeg.

Pierce each egg so it doesn't burst during cooking. Bring a wide pot to a boil, then carefully add the eggs with a spoon and cook 6 minutes (soft-boil).

Meanwhile, drain potatoes, rinse under cold water and peel.

Drain eggs, rinse and peel under cold water and cut each in half.  Serve eggs on top of spinach sauce, with potatoes alongside.
