- 2 Tbsps olive oil
- salt

- 2 Red onions
- 4 Endive
- 100 grams Cucumber
- 200 milliliters Greek yogurt
- 1 Tbsp lemon juice
- salt
- 1 pinch sugar
- 1 bunch Cress
Preparation steps

Peel orange with a sharp knife, remove bitter white pith, carefully cut membranes and remove full fruit segments. Work over a bowl and collect orange juice. Mix orange juice in a bowl with olive oil and season with some salt and pepper in a large bowl. Add orange segments to the bowl.

Peel onions and cut into thin rings. Rinse endive, cut in half, remove stalk and cut endive into strips. Rinse cucumber, cut in half, remove seeds and dice into small pieces. Add onions, endive and cucumber to the bowl, mix and let rest for 10 minutes.

Mix yogurt in a bowl with lemon juice and season with salt and pepper. Add sugar to taste. Drizzle yogurt sauce over salad and mix. Cut cress. Serve salad garnished with cress.
