- For the cucumbers
- 1 shallot
- 400 grams Sea bream fillet
- 3 Tbsps preserved lemon Confit
- 2 Tbsps grapeseed oil
- 1 tsp lemon juice
- Sea salt
- freshly ground peppers
- 4 small Cucumber
- For garnish
- peppercorns
- 2 Tbsps finely chopped parsley
Preparation steps

Peel and finely chop the shallot. Rinse the fish fillet, pat dry and finely chop. Mix the shallot, fish, lemon confit and grapeseed oil until well combined. Season with lemon juice, salt and pepper.

Rinse the cucumbers, cut in half lengthwise and scrape out the seeds. Fill the cucumber halves with the fish mixture and place on a large serving platter. Garnish with pink peppercorns and fresh parsley.
