Flounder with Bacon and Potatoes
Ingredients
- Ingredients
- 500 grams potatoes
- salt
- 4 Plaice
- 3 Tbsps lemon juice
- freshly ground peppers
- 6 Tbsps Pastry flour
- 3 scallions
- 5 Tbsps butter
- 2 Tbsps vegetable oil
- 80 grams diced Bacon
- 1 Tbsp chopped parsley
- 4 parsley (for garnish)
Preparation steps
Preheat oven to 80°C (approximately 175°F). Peel potatoes and boil in salted water until tender, about 25-30 minutes. Meanwhile, rinse fish, pat dry, drizzle with lemon juice, season with salt and pepper and dredge in flour.
In a large nonstick skillet, heat 1/2 tablespoon butter and oil and fry fish, one at a time, until golden brown on each side, about 3 minutes. Add additional butter and oil as needed. Put cooked plaice in preheated oven to keep warm.
Rinse, dry and slice scallions. Cook bacon in pan. Remove bacon using a slotted spoon, reserving the drippings. Cook scallions in drippings and remove from pan. Put potatoes in a clean pan with remaining melted butter and 1 tablespoon parsley. Plate potatoes and fish. Garnish plaice with bacon, scallions and parsley leaves and serve.
