- 36 ozs Heirloom tomato (red, yellow and green varieties mixed)
- ½ bunch cilantro
- 1 handful parsley
- 2 Tbsps white balsamic vinegar
- salt
- peppers
- 6 Tbsps olive oil
- 4 Tbsps Pomegranate seed
Preparation steps
Peel the onion and cut into fine rings. Clean and wash the tomatoes, cut out the stalks and slice the tomatoes. Mix both and put in a bowl.
Wash the cilantro and parsley, shake dry, pluck the leaves, and chop. Mix vinegar, salt, pepper, and oil to make a dressing and pour over tomatoes. Sprinkle tomato salad with cilantro, parsley, and pomegranate seeds.
