Preparation steps

Add sugar to a saucepan and caramelize over low heat until light yellow, then deglaze with apple juice, add bay leaves and sauerkraut and simmer until softened slightly. Rinse grapes, cut in half, remove seeds if necessary and add to the saucepan while stirring. Season with pepper.

Sprinkle fish fillets with lemon juice, let rest for 5-10 minutes and then pat dry. Heat butter in a pan and fry fish on both sides for 3 minutes each. Serve fish fillets immediately with sauerkraut.
