1 tsp sugar
1 Tbsp butter
½ lemon (juice)
18 ozs green Asparagus
14 ozs Strawberries (quartered)
salt
freshly ground Black pepper
3 Tbsps balsamic vinegar
3 Tbsps Strawberry vinegar
3 Tbsps sunflower oil

Preparation steps

1.
Peel the lower third of each green asparagus stalk and cut off the ends. Peel the whole of each white asparagus stalk and cut off the ends.
2.
Cook the white asparagus in boiling water with the sugar, butter and lemon juice for 5 minutes.
3.
Cook the green asparagus for 5 minutes. Drain, retaining the cooking liquid, and rinse the asparagus in cold water and drain again.
4.
Cut each asparagus spear into 3 and mix with the strawberries.
5.
Mix together a little of the asparagus water, salt, pepper, vinegar and oil. Check the seasoning.
6.
Toss the asparagus and strawberries in the dressing and divide between serving bowls.
