- 3 ½ cups Christmas pudding
- 1 ⅔ cups Dark chocolate (70% cocoa solids, melted)
- 5 Tbsps Rum (or brandy)
- ⅔ cup powdered sugar
- To decorate
- 1.333 cups white chocolate (chopped)
- powdered sugar
- ⅞ cup green Sugar paste
- ½ cup red Sugar paste
Preparation steps
1.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.

Crumble the Christmas pudding into a bowl and stir in the chocolate, rum or brandy and icing sugar. Mix well, cover and chill until firm.
3.
Line a tray with non-stick baking paper.
4.
Roll pieces of the mixture into small balls. Place on the tray and chill while you make the decoration.
5.
Melt the white chocolate as before and set aside to cool and thicken slightly. Spoon over the top of the truffles, allowing it to run down the sides.
6.
Roll out the green sugarpaste thinly on a surfaced dusted with icing sugar. Cut out 50-60 holly leaves and mark the veins with a cocktail stick. Place on the truffles.
7.
Roll the red sugarpaste into 50-60 tiny balls and place on the truffles. Leave to set.
