- 2 Chicken breasts (cooked)
- 100 grams Arugula
- 2 Peaches
- 1 shallot
- 40 grams chopped almonds
- 2 Tbsps white balsamic vinegar
- 2 Tbsps Thyme honey
- 5 Tbsps olive oil
- salt
- freshly ground peppers
Preparation steps
1.
Rinse and dry arugula. Blanch the peaches, peel, and cut into wedges. Cut chicken into slices.

Peel and finely chop the shallots. Mix vinegar, honey, oil, and salt and pepper, and stir in the shallots.
3.
Mix the peaches, chicken, almonds, and vinaigrette. Serve in glass bowls garnished with arugula.
