250 grams Couscous
20 grams butter
3 sprigs mint
100 grams Raspberries
100 grams Blueberries
500 grams Watermelon
5 Tbsps Orange juice

Preparation steps

1.

Trim the scallions and thinly slice. Bring the broth and oil to a boil, add the scallions, remove from the heat and sprinkle in the couscous.

Let stand for 3-5 minutes then add the chopped butter and fluff with a fork. Chiffonade the mint and rinse the berries. Cut the watermelon into wedges and grill or broil for 2-3 minutes per side in a lightly oiled grill pan.

3.

Stir the orange juice into the couscous along with the mint and berries. Season with pepper and serve with the grilled watermelon.
