4 Tbsps Apple jelly
4 Tbsps lemon juice
1 pinch cayenne pepper
1 ½ kilograms lightly smoked Fresh ham roast
2 Tbsps clarified butter
For garnish
Oranges

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Warm the apple jelly in the microwave or small saucepan. Whisk in the lemon juice and cayenne pepper. Rinse ham in cold water and pat dry. Wrap tightly with kitchen twine. Heat the butter in a roasting pan and sear the ham on all sides. Pour 200 ml (approximately 1 cup) of water into the bottom of the pan and brush the ham with some of the glaze. Bake for about 90 minutes, brushing often with the remaining glaze.

Remove the ham from the roasting pan and transfer to a serving platter lined with green leaf lettuce. Garnish with orange slices.
