300 grams mixed Lettuce
For the blue cheese dressing
75 grams Blue cheese
300 grams Yogurt (0.1% fat)
salt

For the Thousand Island dressing
1 small Pickled cucumber
1 shallot
½ red paprika
2 hard-boiled egg yolks
50 grams Mayonnaise
3 Tbsps Whipped cream
3 Tbsps Ketchup
salt
Chili powder

Preparation steps

For the blue cheese dressing: Crumble cheese and puree with the yogurt, season with salt, pepper and lemon juice, chill.

For the Thousand Island dressing: Chop the gherkins. Peel the shallots and grate on a box grater.

3.

Heat the broiler. Place the pepper, cut side down on the broiler pan and broil until the skin chars. Peel and very finely chop. Press the yolks through a sieve, mix with the remaining ingredients, season with salt and chili powder. Serve the two dressings with the lettuce.
