- 1 chicken (3 lb) or purchase pre-cut
- 2 shallots
- 3 cloves garlic cloves
- ¾ inch freshly grated ginger
- 2 Tbsps sugar
- ⅜ cup soy sauce
- 2 Tbsps Oyster sauce
- 1 generous pinch Chinese 5 spice powder

Preparation steps

Wash the chicken, pat dry and joint into 8 pieces. Peel the shallots, garlic and ginger and dice very finely. Put into a bowl with the sugar, soy sauce, oyster sauce and 5-spice powder and mix well. Add the chicken pieces and marinate in the refrigerator overnight.

Next day, drain the chicken pieces and grill on a hot barbecue for about 25 minutes, turning and brushing with the marinade from time to time. Arrange on plates and garnish with coriander. Serve with toasted sourdough bread, and bowls of soy sauce and chilli sauce.
