4 Pork cutlets
For the spice paste
3 Tbsps allspice
3 dried chili peppers
2 bay leaves
2 onions
3 garlic cloves
1 Tbsp brown sugar
2 tsps fresh thyme
salt
freshly ground peppers
For the orange sauce
1 Tbsp vegetable oil
250 milliliters Orange juice
3 Tbsps Orange marmalade
2 Tbsps soy sauce
cayenne pepper
For greasing

Preparation steps

For the spice paste: Toast the allspice in a small skillet until fragrant. In a mortar, crush the allspice with the chile peppers, bay leaves and a pinch of salt. Peel and chop the onions and garlic. Combine the spice mixture, onions, garlic, sugar and thyme in a blender, and pulse until smooth. Season with salt and pepper to taste.

For the pork chops: Brush half of the spice paste on the pork chops. Place in a dish, cover and refrigerate for 3 hours.

For the orange sauce: Heat the oil in a saucepan. Add the remaining spice paste and cook, while stirring, for 5 minutes. Stir in the orange juice and orange marmalade, and simmer for 10 minutes. Season with the soy sauce, and cayenne peppers, salt and pepper to taste. Allow to cool, while stirring occasionally.

For the pork chops: Heat a charcoal grill.

Push coals to edges of the grill. Grease the grill with oil. Place the pork chops in the middle (over indirect heat) of the grill and cook, turning occasionally, until done, about 15 minutes. Serve with the orange sauce.
