- 2 eggs
- 1 tsp freshly chopped rosemary
- 1 tsp freshly chopped Sage
- 4 Pork cutlets (ready to cook, each around 180-200 grams)

- Pastry flour
- 20 grams clarified butter
- 200 milliliters Beef stock
- 50 milliliters Orange juice
- 2 small Clementine
- 2 sprigs rosemary
- 1 Tbsp Sage
- 1 tsp liquid honey
Preparation steps

Preheat the oven to 80°C (approximately 175°F). Beat the eggs with the chopped herbs.

Rinse the pork chops, pat dry and season with salt and pepper. Place in the flour and then dip into the beaten egg.

Cook the pork chops in a hot pan with butter until golden brown and keep warm in a preheated oven.
4.
Deglaze the pan drippings with the orange juice. Rinse the clementines under hot water, pat dry, cut into thin slices and add with the herbs into the sauce. Season with salt and pepper and simmer for about 5 minutes over medium heat. Season to taste with honey.

Arrange the pork chops on a plate and serve drizzled with the sauce.
