1 Zucchini
14 ozs Salmon
2 garlic cloves
1 organic lemon (zest and juice)
3 Tbsps olive oil (plus more for the grill)
Sea salt

Preparation steps

Cut the potatoes into bite-size pieces or slices. Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into bite-size pieces. Rinse the zucchini, trim and cut lengthwise into thin slices. Rinse the salmon, pat dry and cut into bite-size pieces. Alternately thread the ingredients onto about 8 wooden skewers, threading the zucchini in a wavy pattern.

Peel the garlic and press through a garlic press into a bowl. Whisk in the lemon zest, juice and oil, season with salt and pepper.

Heat the grill and lightly oil the grates. Place the skewers on the grill, brush with the garlic and lemon oil and cook on the hot grill with the lid closed for 10-12 minutes, lifting the cover occasionally, brushing the skewers with the garlic and lemon oil and turning them as they cook.
