Preparation steps

1.

For the sand eels, rinse eels, pat dry and sprinkle with lemon juice. Let rest about 15 minutes.

For the lemon butter, melt butter in a small pan and stir in lemon juice.

Grill eels over a hot grill for about 3 minutes on each side. Drizzle on oil as needed.
