Preparation steps

Rinse the sea bass and pat dry. Rinse, trim, and slice the fennel thinly lengthwise. Rinse and trim the spinach. Squeeze the juice from one orange, and remove the whole fruit segments from the other two. Saute the fennel in 2 tablespoons of olive oil for 2-3 minutes, and add the orange juice. Add the spinach and orange segments, toss to combine, and season to taste with salt and pepper.

Season the sea bass with salt and pepper, drizzle with the oil, and cook on a grill for 5-6 minutes per side.
