1 organic lime (juice and zest)

3 Tbsps White vinegar
1 Tbsp honey
18 ozs Watermelon
2 handfuls lettuce leaves (e.g. romaine lettuce)
3 Tbsps olive oil

Preparation steps

Put the ricotta in a bowl. Wash chili, chop finely, add with lime zest and juice, season with salt and mix well. Cut cress from the bed. Wash the chives, shake dry, cut into small rolls and mix with the cress on a plate. Cut out 12 small dumplings from the ricotta mixture and toss them in the herb mixture.

Mix 1 tablespoon vinegar with honey. Cut watermelon into 12 small wedges, brush with the honey vinegar and grill on the hot grill from both sides for a total of about 5 minutes.

Wash lettuce leaves, spin dry and cut into strips. Mix in a bowl with remaining vinegar, olive oil, salt and pepper. Arrange salad in the center of plates. Add ricotta gnocchi and grilled watermelon and serve.
