Preparation steps

1.

Blanch the tomatoes in boiling water. Remove the tomatoes from the water and peel. Remove the stem and seeds, and finely dice. Rinse the cilantro, pat dry, and remove the leaves from the stems. 

2.

Halve the avocados and remove the seeds. Scoop out the pulp with a spoon. Mash the pulp with the lime juice and olive oil until smooth. Mix in the tomatoes, cilantro, and the chives. Season the guacamole strongly with salt and cayenne pepper, and serve.
