For the salad
150 grams Crème fraiche
150 grams Yogurt (0.1% fat)
2 Tbsps Curry powder
1 Tbsp soy sauce
salt
freshly ground peppers
2 Tbsps lemon juice
250 grams soybean sprout
100 grams diced Apple

Preparation steps

1.

Whisk the creme fraiche, yogurt, curry powder, soy sauce and lemon juice together until smooth. Season with salt and pepper. 

2.

Combine the bean sprouts, diced apples and dressing in a large bowl, mix until well coated and refrigerate for 1-2 hours. 

3.

Lay the ham slices flat, spread about 1 tablespoon of the sprout salad over the top, roll up and secure with a toothpick. Place the ham rolls on a large platter and serve the remaining sprout salad on the side.
