Ingredients

For the potatoes
600 grams small, waxy potatoes
3 Tbsps olive oil
salt

For the ham and orange sauce
4 organic Oranges
4 slices cooked ham (about 140 grams)
vegetable oil
1 Tbsp butter
1 Tbsp sugar
1 tsp cornstarch

Preparation steps

1.

For the potatoes, rinse the potatoes thoroughly, cut into quarters, mix with the olive oil, and place on a baking tray. Season with salt and pepper.

Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 45 minutes, turning occasionally.

For the orange sauce, peel the oranges, taking care to remove the white skin, loosen the fruit fillets from the partitions and then chop. Squeeze the juice and keep the residue.

Fry the ham in a hot grill pan with a little oil on both sides until golden brown, then remove and keep warm. Drain the drippings.

To prepare the orange sauce, slightly caramelize the butter and sugar in a pan and pour in the orange juice. Add extra water, if necessary. Simmer for approximately 2 hours, pour in the cornstarch with some cold water and mix in the orange pieces.

5.

Serve the potatoes with one halved ham slice on a plate and serve drizzled with the orange sauce.
