1 shallot
2 garlic cloves
2 Tbsps vegetable oil
1 Tbsp Tomato paste
100 milliliters Red wine
½ tsp dried oregano
12 slices Bacon
400 grams Ground meat (such as beef)

1 red onion
4 Hamburger bun (with sesame seeds)
4 Lettuce
120 grams Blue cheese

Preparation steps

Blanch the tomatoes, peel and cut into pieces. Peel and finely dice the shallot and garlic. Heat 1 tablespoon of the oil in a skillet. Add the shallot and garlic, and cook until translucent. Stir in the tomato paste and wine, and bring to a simmer. Add the tomatoes and oregano, and allow to simmer until slightly thickened, about 15 minutes.

Heat 1 tablespoon of the oil in another skillet. Add the bacon and cook until crispy. Remove and drain on a paper towel.

In a bowl, season the ground meat with salt and pepper to taste. Shape the meat into 4 burgers. Cook the patties in the hot bacon grease until golden brown, about 4-5 minutes per side. Peel the onion and cut into rings. Add to the skillet with the burgers and cook until golden brown, about 2-3 minutes.

Preheat the oven broiler.

Cut the hamburger buns in half horizontally and toast under the broiler until golden brown.

Rinse the lettuce and shake dry.

Place the burgers on a parchment-lined baking sheet. Place a slice of cheese on top of each burger. Melt under the broiler.

Place a lettuce leaf on the bottom half of each bun. Sprinkle with the onions. Place the burgers on top. Add the tomatoes, blue cheese and bacon, and sandwich with the top half of each bun.
