- 2 Tbsps Pine nuts
- 1 organic lemon
- 1 garlic clove
- 3 handfuls Fresh herbs (such as basil, sorrel Ramson)
- 80 milliliters olive oil
- 2 Tbsps grated Parmesan
- salt
- freshly ground peppers
Preparation steps

Toast the pine nuts in a dry frying pan fry, remove from heat and let cool. Rinse the lemon in hot water, wipe dry and finely grate the zest. Squeeze the juice from the lemon. Peel the garlic. Rinse the herbs, shake dry and chop coarsely.

Place the herbs, pine nuts and garlic in a blender and puree. Incorporate the oil until a creamy pesto is created. Add the lemon zest, lemon juice and Parmesan. If necessary, stir in some cold water and season with salt and pepper.
