400 grams Ricotta cheese
75 milliliters milk
3 Tbsps chopped, mixed Fresh herbs (such as Parsley, basil, tarragon)
1 shallot
1 garlic clove
salt
freshly ground peppers

Preparation steps

1.

Rinse the tomatoes and place on a oiled baking sheet. Brushed the tomatoes with oil, and roast for 20 minutes in a 200°C (approximately 400°F) oven. 

2.

Mix the ricotta cheese with the milk.

3.

Peel and finely dice the shallot and garlic. Mix the shallot, garlic, and herbs into the ricotta mixture. Season to taste with salt and pepper. 

4.

Spread the ricotta on small plates, top with the tomatoes, and serve.
