2 cups water
1 ½ cups sugar
1 tsp vanilla extract
2 cups cold Espresso
2 cups Soy milk

Preparation steps

1.
Heat the water and sugar and water in a pan until the sugar has dissolved. Bring to a boil and boil for 5 minutes. Remove from the heat, cool and stir in the vanilla extract. Stir well and chill.

Pour the milk into chilled glasses and carefully spoon the vanilla syrup on top.

Pour the espresso on top and add some of the remaining milk.

Heat the remaining milk until hot, but not boiling, then pour into a food processor or blender. Blend until frothy.

Spoon the froth on top of the glasses and serve immediately.
