Preparation steps

Slowly toast the pine nuts in a dry pan. Remove the pine nuts from the pan and let cool.

Rinse the basil, pat dry, and remove the leaves from the stems.
3.
Peel the garlic, then crush roughly in mortar with the pine nuts and a pinch of salt. Add the basil and the parmesan, and crush until a fine paste has formed. Gradually incorporate the oil until a thick pesto has formed. Season to taste with salt.
