- 14 ozs Stockfish
- 2 cups Pine nuts
- 3 garlic cloves (finely diced)
- 2 Tbsps olive oil
- 1.333 cups raisins
- ⅔ cup black Olives (pitted)
- 2 fresh bay leaves
- 1 tsp rosemary (chopped)
- 1 Tbsp thyme (chopped)
- To garnish
- 8 fresh bay leaves
- 4 thyme
Preparation steps
1.
Prepare the fish by cutting it into 8 cm large pieces. Rinse the salt of well and leave to soak in a bowl of water for 24 hours. Change the water at least four times.

Dry roast the pine nuts and set aside.
3.
Fry the garlic in 1 tbsp hot oil for about 2 minutes. Add the raisins, olives, pine nuts and herbs and season with salt and ground black pepper. Cook for around 3-6 minutes.
4.
Pat the fish dry and roll in flour. Heat the remaining oil in a pan and fry the fish on both sides for 5-8 minutes on a medium heat.

Serve on preheated plate with the dried fruit mixture and garnish with the herbs.
