1 tsp freshly grated ginger
¼ tsp cloves (ground)
juice of lemons
2 Tbsps white Rum
1 bunch cilantro (chopped)

2 garlic cloves
2 Sirloin steak (each about 200 grams)
1 Papaya (400 grams)
400 grams Tomatoes
2 Tbsps Lime juice
2 Tbsps Orange juice
cayenne pepper
2 Tbsps sunflower oil
½ pkg Tortilla chip

Preparation steps

1.

Halve pepperoncini, remove seeds, rinse and cut into strips. Mix ginger and pepperoncini with cloves, lemon juice, rum, 2 tablespoons coriander and a pinch of salt. Peel garlic and squeeze through a garlic press. Coat meat with mixture.

Cover meat and refrigerate, allowing it to marinate for 2 hours.

Halve papaya, remove seeds, peel and finely chop. Rinse tomatoes, cut into quarters, remove seeds and chop. Mix both with lime juice and orange juice and season with salt and cayenne pepper.

Heat the oil in a pan and brown the steak on both sides for 3-6 minutes (depending on doneness preference). Wrap in aluminum foil and leave to rest for 5 minutes, then cut into slices. Serve with salsa and taco chips.
